ABSTRACT

Background: Bruasa is the one of special snack in south Sulawesi. Creaker is besed on rice flour ingredient or this weat flour is the public amid, specially in Bugis and Makassar tribe to enriches the taste and baruasa benefit so one of the purple sweet potato using. Nutrient contain on purple sweet potato is good for health. Beside on rich vitaminA contain, purple sweet potato is an antioxidant an it has a role as in an anti cancer.

Objectives: This research means to know the public receptivity of baruasa by adding purple sweet potato flour include are color aspect, taste aspect, aroma aspect, texture aspect and nutrient contain.

Methods: The research is a pre-experiment by using post group design research. Baruasa receptivity is obtained by completely rating form. Baruasa rates based on hedonik for 25 panels test.

Results: The result of research obtained by the making of purple sweet potato flour, it is a public receptivity for baruasa by adding purple sweet potato flour an 50% concertration into the mention delicious of the color aspect it is 68%, it mentions is very delicious of the aroma aspect it is 83%, it mentions is delicious of the taste aspect it is 79% and it mentions is delicious of the texture aspect it is 74%. The public receptivity to baruasa by adding purple sweet potato flour it is 75% concertration and mention delicious into the color aspect it is 74%, it mentions is delicious of the aroma aspect it is 77%, it mentions is delicious of the taste aspect it is 75% and it mentions is delicious of the texture aspect it is 79%. The public receptivity to baruasa by adding purple sweet potato flour 100% concetration into the mention is verydelicious of the color aspect it is 86%, it mentions is delicious of the aroma aspect it is 73%. It mentions is delicious of the taste aspect it is 74% and it mentions is delicious of the texture aspect it is 65%.

Suggestion: If we want to make a baruasa, suggested by adding purple sweet potato flour. It better we used the purple sweet potato by 75% concetration who people like it.
