DAYA TERIMA TERHADAP NUGGET IKAN LAYANG (DECAPTERUS RUSSELLI) DENGAN PENAMBAHAN WORTEL

Abstract

Background: Nugget is a fast food product or food practical. Nuggets are well known among the poople ranging from children to adults because it is typical. Making kite fish nuggets with the addition of carrots is one of the product that are made to enrich the nuggets taste and nutrient content of the nuggets in general.  In addition, utilizing the kite fish production in the area SulSel and protein content in fish kite high enough.

Objective: The purpose of this study is to determine the public acceptability of the fish nugget with the addition of ginger powder covering aspects of taste, color, texture, flavor and nutritional content.

Methods: This study is a pre-experiment using a study design Post Text Group Design. Acceptability of fish nugget with the addition of ginger powder hedonic assessed by testing the 25 panelists.

Results: The results showed elevated fish nuggets with the addition of  100 g of carrot flavor aspect, while 80% declared from aspects like color, aroma and texture expressed very happy with the respevtive percentages 89%, 84% and 83%. Receptivity to kite fish nuggets with the addition of 150 g of carrots aspects of taste, color and  aroma to the percentage of panelists expressed love foreach aspect is 72%, except for 73% the texture aspect. While the received power of the kite fish nuggets with the addition of200 g of carrot aspects of taste, color, aroma and texture like the percentage of panelists expressed respectively 77%, 73%,80% and 76%. Kite fish nuggets with the addition of 100 g of carrots have a higher nutritional value.

Conclusion: The fish nugget with the addition of ginger powder 100 g, preferably both from the panelists taste, color, flavor and texture.

Suggestion: Further research is suggested to assess the content of nutrient in the laboratory and measuring the shelf life of fish nuggets elevated with the addition of carrots.
