TINGKAT PENGETAHUAN DAN PRAKTIK PENJAMAH MAKANAN TENTANG KEAMANAN PANGAN PADA USAHA KATERING DI KOTA MAKASSAR

Abstract

Background: Food-worker’s ideally should have enough knowledge about safety food and skill on its production and serving sanitation, that’s why the food could be safety and guaranteed on health. Catering service is a familiar place of producing and serving the food based on society request must meet the health standard, by the health standard is pleased to have a quality and guaranty food.

Objectives: This research aims to know how the food-worker’s knowledge and practice about safety food of catering service in Makassar.

 

Methods: This research is descriptive research with the number of sample is 16 respondents that were chosen by purposive sampling. The data of knowledge of food-worker’s taken by direct interview using questionnaire and the practice is by direct observation using check-list observation.

Results: This research’s tells us about the food-worker’s knowledge about safety food of catering service in Makassar is generally categorize as good and fire were 68.75% (good is 25% and fair is 43.75%) whereas the food-worker’s practice about safety food of catering service in Makassar is generally categorize as good and fire were 81.25% (good is 6.25% and fire is 75.0%).

Suggestion: The Director of Catering in Makassar is suggested to handle training to their employees, especially the employees who handle the part of food production, and do control to their practice especially using apron and head cover (hat) and do not playing jokes or  doing other activities while working.
